My name is Chris, but most people know me as Chef Chabot. Cooking and food have always been a major part of my life, be it cooking with my mom, or working my way through the ranks of restaurants. Food is important not only for nutrition, but a way to share moments and make memories with our loved ones.
All of my jobs growing up seemed to be based around food, from working at a local grocery store, to my first job in a restaurant kitchen as a dishwasher. It was while working as a dishwasher that I learned there was a whole world of food I didn’t even know existed!
A young sous chef took me under his wing and began to teach me the basics and fundamentals of food. This is when I discovered I had a passion to cook and wanted to learn as much as I could.
After high school I set off to attend the Culinary Institute of America (CIA) in Hyde Park New York, where many of my culinary heroes had also attended. My time at the CIA taught me to have respect for the ingredients I use in the kitchen and the fundamental skills of cooking. The school’s motto “Preparation Is Everything” became, and continues to be, a personal mantra throughout my culinary career.
After graduating with honours, I moved to Vancouver where I worked in several fine dining restaurants, working my way through the ranks from line cook to chef. Vancouver was a melting pot of styles and cuisines and I honed my skills in various cooking techniques and flavours, including Classic Italian, Chinese, Japanese and Spanish.
I then moved to Calgary for the opportunity to be the executive chef at a local restaurant. After years working late nights and every holiday, I eventually transitioned into a more stable schedule as a culinary consultant for a food service company. Here, the focus was on helping people find solutions and seeing another perspective of day-to-day operations. Helping people and sharing my knowledge sparked a new passion.
I knew that I wanted to find a way to continue to share my love of food directly to people, not just through being a restaurant chef and dining experiences. With this notion, Chef Chabot At Home was born.
